Hello mammas,
Spring is here already (for many of us ππ€) and that means fresh greens and veggies! ππ
But what nature's really got for us in the season are these nettles and wild garlic. And I found a way to incorporate them in the little one's menu....because you know!....most kids dont eat greens just like that. But if there's a chance to successfully hide them, then thats something it may work!
Caleb here, my little heart with blue eyes, is a cream soup lover. Hurrrrray! He usually accepts all cream soups, which is why I thought that this is my best chance to add the good stuff: fresh nettles and wild garlic.
Edible green wild foods ππ
I picked up the nettles and wild garlic myself. They grow hapilly on our land, a submountain area! This is like paradise! And I know that these are 100% bio, eco, organic, you name it. The nature here is abundant and the pollution is soo soo minimal.
Ingredients:
Wild garlic and nettles are the first ones to spring to enjoy.
Their vibrant green can only be associated with health and energy! ππ
This is the list of ingredients, but you can adjust it on your needs or taste.
- stinging nettle tops
- wild garlic
- one piece of celery
- one parsnip
- a few potatoes
- one or two onions
- salt and pepper
- stock (vgetable or chicken stock) or you can simply use water
- one or two TBsp olive oil
- half and half cream (optional)
- bay leaf
- Italian seasoning
You can skip celery for example and add instead carrot. This is really a recipe you can play with and find your favorite combo of veggies for the soup. π΅
Instructions
Step 1:
First, you need to blanch the nettles.
How you do that? Pretty simple.
Bring to a boil a large pot of water. Make sure to be enough for the quantity of nettles you have.
You can add some salt too.
In another bowl, add cold water and ice cubes.
Put the nettle tops in the boiling water for 2-3 minutes and then transfer them in the ice water bowl.
Not to mention that you need to wash the nettles.
Step 2: Cut your veggies in little cubes.
Step 3: Saute the veggies
Add olive oil in a pan and start to saute all veggies: onion, celery, parsnip, potatoes.
Add spices: bay leaf, salt, pepper, Italian seasoning.
Step 4:
It's time to add the stock or water and let it boil until the veggies are done.
Add nettle tops and wild garlic and boil for another 2-3 minutes.
Turn off the heat.
Use a vertical blender to make it smooth. Now its the time to add cream if you want.
We served it with grilled bread and some seeds.
This is it, mammas!!
Its just a regular cream soup, but its also full of nutrients, nourishin and have many health benefits for our body.
It is the perfect lunch or dinner for the whole family, dont you think?
Plus, its easy to make which is so important nowadays. Healthy food to be ready in no time sounds like a dream!
Love missdeli π

Oh to be honest I didn't know you could eat stinging nettles really interesting I hope that's not embarrassing now haha. But a good idea to bring the little ones to the green vegetables..
Greetings from germany!
Its not, dont you worry about it.π€π€
Its not something spread world wide.
Greetings from Romania too! I hope you're OK? Are you in back in Germany?
I am reassured about that. But I am always happy to learn about such things and to expand my horizons. Yes, I'm currently back in Cologne and working on my exam preparation, which is taking up a lot of time. How are you? Have you been able to find a little more peace?:)
Ohhh exams! Sounds like a stresful period of time. π
Yes, things got a bit easier for me these last 2 months, but we are always on the run with everyday chores. Parent life is coming also with some challenges and all in one, I feel its a never ending ride. The solution I found is to adapt and manage our lives to be healthy, happy and live in the present.
Yes, it definitely is. That sounds like a good solution for all of you that you found. Sometimes you just need a little time to figure out which one is the best :)
The main thing is to be happy with it in the end:) I wish you all the best furthermore!
Het darling. Sorry for my late reply. Both me and my little one are stucked with a very ugly cold. Thank you for your lovely comment!
Stay safe and seding hugs from here π€π€
Oh no are you two feeling better already? Something like that can really blow you away. Get well soon from me!!<3 and don't stress about writing, it always takes me a little longer :)
Greetings:D
A nettle soup, thatΒ΄s interesting :) The only thing we used nettles for (as kids) was to push each other into them :D But yeah, I have heard they can be used in the kitchen too. I might try this recipe :)

I am always happy seeing nutritious recipes for kids. It's a great help to all moms out there.
Thank you Missleray! π€ Do you have nettles in your area?
Ok, I'm not a mamma, am I still allowed to comment?
Hahahha! Thats a good one! π€£π€£
And actually, I thought about using that word. Thats what I felt when writing this post. π
Ah ok, I'll leave it to the mammas then.
Well, I thought that this will be mostly read by mammas as they usually cook in the house...maybe I should edit it and say "hello mammas and Galen?" π
I like to cook, I'm not the best ever but I have a few things I can make well and I know the basics so am happy to try most things.
This is more than enough, I think! Do you have a favorite dish you like cooking?
Not really a favourite, I just cook what I feel like eating and am not afraid to try something new.
Thank you guys!
A very healthy recipe with lots of nutrients, although I'm not a fan of cream soups I think I'd like this one especially as it has an ingredient that not many people use, namely wild garlic (leurdΔ).
I wish I see you trying!ππ However, if you want wild garlic, just ask. We have a lot of it in the forest, you know where. You can actually go and pick it up yourself. π
Yes I know the place, I just have to walk a bit to get there because of the access road, but that wouldn't be a problem.
We are very lucky to have such organic food even so close, by the way I don't know how well known is wild garlic (leurdΔ in popular name), because it is nothing like the garlic that everyone knows.
Well, if you google wild garlic, you'll find exactly the leurda we know.
