No sugar Apricot Ice Cream 🧡🍨🧡

Hello everyone,

Now is the season we've all waited for: Summer! ☀️ 🧡

That means harvesting fruits directly from the trees! In Romania this is still possible. Luckily, Romanian people still have fruit trees in their yards, their gardens, their orchards. Right now the local markets are full of peaches, apricots, raspberries and soon enough there will be blackberries, blueberries and figs.

We have a lot of fruit trees on our property: Cherry Tree, Sour Cherries Tree, Apricot Tree, Peach Tree (still young), Apple Tree, Pear Tree, Plum Tree, Fig Tree. We have also bushes of Raspberries, Blueberries, Blackberries, Red Currants. And a couple of strawberries. I might miss something but what I'm trying to say here is that having your own fruits is a feeling that makes you very very happy.

To know that my child and us are eating the fruits we've taken care of is something I cherish and it has a huge value for me. ...😁🧡

Anyways, here's a recipe you could try if you want to substitute ice cream with a healthy version, just perfect for kids and the whole family!

Ingredients:

  • a couple of apricots (6-7)

  • yoghurt (Full Fat if possible)

  • honey

  • vanilla bean (optional)

You can replace honey with other sweetener like agave, maple syrup or stevia. If you want to have a creamy texture, use full fat or Greek Yoghurt.

As for Instructions, you don't need 'em.

You only need a food processor.

Put everything in there and mix it up. You can save some chunks of apricots and add them only after you blend the ingredients.

If you don't have a food processor, that's fine. Using a fork, mash the apricots first and then combine all ingredients in a bowl. It's simple as that..

Keep this nice healthy and fresh ice cream in the freezer for a couple of hours and then enjoy!

My kid could eat this every day and so do I. It's so SO refreshing, full of flavour and most important, healthy!

NO preservatives, NO additives, NO sugar and artificial sweeteners!

It's just perfect on a hot summer day! Btw, we have all week + 35°C...

Ohh and almost forgot! This recipe is ready in no time, really! Just a couple of minutes and this is huge when it comes to recipes because with kids at home, time is limited and we're almost always on the run!

Hopefully this is a recipe you can try for your kids, I honestly say that my kid loves it!

a-aaaaa, why you doing this to me, when I have +30 C around! I want this now!!!!! but I am not in Romania and sadly dont see apricot trees any close around me xD

If you don't have a food processor, that's fine.

I do have a processor. I just have no apricots, totally.
I have mint jungles, and also can get lemons and shwepps from the nearest shop. Basically, that is my recipe against the +30C.

Sorry 😁😁 Actually today I'm gonna make a batch with peaches. I have a lot in the fridge and they are ripe already.

30 still sounds good. We have 36-37 all week, it's insane.

You can replace apricots pretty much with every fruit like strawberries, blueberries, raspberries, peaches, kiwi, mango pinapple... even mint. I think I made once mint and matcha powder ice cream..

Lemons, shwepps and mint sounds amazing though. I would be more than happy with what you have there!

at some point we will have strawberries and blueberries, and a lot of apples, and very little amount of raspberries, but its a question of time and weather and how much nature will benefit us. its not a 100% promise. what we can rely, is just the grocery shelves, ehehe... when I will be back to the city and the season apricots will be cheap, I will do exactly your recipe.
