Makar Sankranti is the first and special festival of Hindu religion. The festival of Makar Sankranti is celebrated every year but its date keeps changing every year. Bathing in Ganga and charity have special significance on this day.
On this day the Sun becomes Uttarayan i.e. the Sun moves towards the north. Also, all the auspicious works start from Makar Sankranti. The festival of Makar Sankranti is celebrated on the fifth day of Shukla Paksha of Paush month.
The importance of Makar Sankranti is very high. During the Mahabharata period, when Bhishma Pitamah was lying on the bed of arrows, he saved his life on the day of Makar Sankranti. He had waited for the day of Uttarayan to leave his body. He sacrificed his life on the day of Makar Sankranti. It is believed that whoever leaves his body on the day of Makar Sankranti i.e. Uttarayan. Actually, it is said in Geeta that the person who leaves his body on the date of Shukla Paksha in the six months of Uttarayan becomes free from the cycle of birth and death and attains salvation.
Makar Sankranti is celebrated in many ways in different parts of the country. On this day, different types of dishes are prepared and eaten in every corner of the country from East to West and from North to South.
Similarly, in Uttarakhand, Ghughuti is made on the day of this festival. Ghughuti garland is also made, which children wear.
To make Ghughuti, first boil a glass of water in a pan and add jaggery in it, so that this syrup is ready.
Now mix flour, sesame seeds, semolina, semolina flour powder and ghee pieces well and add jaggery water to it.
Knead the dough well. Keep in mind that the dough should neither be too soft nor hard.
Now roll the dough lengthwise and then fold it from the middle.
Heat oil in a pan and fry it until it turns golden brown.
In Uttarakhand, the festival of Makar Sankranti is celebrated as Uttarayani or 'Ghughutiya' tayar (festival) and on this day black crows are called as special guests to eat Ghughut, a dish made of flour and dates.
On the day of Makar Sankranti, children put garlands of Ghughuts around their necks and call crows.

“लै कावा लगड़ में कै दे भै बैंनू दगड़"।।
“लै कावा बौड़ मेंकै दे सुनौक घ्वड़”।।
