Last week our Australian friend invited us over for dinner and to have the kids make damper over a fire.

Damper is a dough that is mixed together, put on a stick, and cooked over coals. It is something our friend made in the bush growing up and something he continues to teach others about.

The dough is a mix of flour, salt, baking soda, and water. Once it is the right consistency, you put it carefully on the stick and even it out so it isn't too thick in any one spot. It needs to be even so it cooks evenly.

The kids love making this. It takes about 30 minutes cooking over the coals. You don't want it cooked over a flame because it will burn.

When the bread is no longer soft on the outside, but it has a nice crust, you carefully remove it with a potholder. It is really warm, so you have to be careful not to burn yourself.

Our friend had some yummy jam to spread on the bread after they were cooked. It was really delicious! The kids all gobbled up their damper bread within a few minutes!

After we cooked our damper, he added some wood to the fire and we got to enjoy some time on the porch by the fire. It was really a lovely evening!

That looks too fun and tasty. I wish I'd thought to do this with the girls when they were younger. I always thought it was done only as a loaf I didn't know you could do it on sticks.
My kids love it. It's almost as fun as making smores, although it does take a bit more time!
