"Kampua" - Sarawakian Noodle recipe

"Kolo Mee" or "Kampua" is a dish of springy egg noodles tossed in a sweet and savory shallot, lard and topped with seasoned minced pork and char siu.

I had the joy of getting a pack of Instant Sarawakian Mee Kolo but the instruction on the package isn't the best IMO.

I've written here the recipe for future reference in case you want to try to make your own Sarawakian Mee Kolo at home.

Sarawakian Mee Kolo, also known as Mee Kolok or Kampua, a dish that combines the best of the region's ingredients and cooking styles. This dish is a staple in Sarawak, the largest state of Malaysia, and it's a must-try for anyone who loves rich, savory flavors and tender noodles.

Ingredients

  • 150g pork shoulder to slice
  • 250g Minced pork
  • Instant Kampua Noodle Pack
  • Herbs and spices;
  • 2 teaspoon sugar
  • 1 teaspoon Umami powder
  • 1.5 teaspoon thyme seasoning
  • some cooking oil, I used coconut oil, lard is best
  • 3 tablespoon dark soy sauce
  • 1 teaspoon sesame oil
  • some vinegar
  • 2 clove garlic, crushed and diced

Preparation


Add all the herbs and spices into the minced pork and pork shoulder.

Here's how you mix the ingredients into the sliced pork and minced pork.

Heat the oil in a pan over medium heat. cook the minced pork first and add the diced crushed garlic after the meat starts browning. Once you're done with the minced pork, cook the pork shoulder after removing the pork mince. You can reuse the oil from the pork mince.

When cooking the pork shoulder, make sure to caramelize all the marinade and overcook the pork shoulder, you want the pork well done.

Once done, leave the meat to the side and start cooking the noodle.

Prep a pot of water, add some vinegar to neutralize the baking soda smell of the noodle, you can use cheap artificial vinegar here since its not to be consumed.

Add the instant noodle and cook till al dente.

At the same time you should prep the instant noodle seasoning to mix after the noodle has been cooked till soften.

Once done, pour noodle into colander and remove the water, mix the noodle with the seasoning.

Slice the pork shoulder into pieces according to how much you want them, add noodle, minced pork and pork slice into a bowl, add any extra herbs according to your preference, I added coriander and some green onion.
