Its been a long while not posting lately as I am having anxiety and depression... but trying to fight back...
Anyway I just want to share some of my Original Recipe which also helps me to recover for some time...
This is called Pinoy Style Pork Masala.
Masala is a different ground mixed spices into paste, it is usually common in Indian Cooking.
It is also very popular anywhere in south asia and other neighbor countries specially in India where masala originated.
Ingredients:
- Curry powder
- Turmeric Powder
- Chilli Powder
- Star Anise or Cloves
- Black/White Pepper Powder
- Bay leaves
- Spring Onion for garnish
- 4pcs Big onions white or red
- 1 or 2 bulb garlic
- 4pcs Tomatoes
- ginger / turmeric
- 1/2 kilo Pork any parts like belly, panga, pata
- Maggi Magic Sarap
- 1/4 cup Oyster sauce
- 100g butter or any cooking oil
- 1-2 cups gata / soyamilk /fresh milk
- cheezwhiz cheddar (optional)
Procedure:
Heat pan / casserole in medium heat, put butter/ oil, fry garlic, onions, ginger until slightly golden brown, then put tomatoes keep mixing and mashed tomatoes, saute for at list 5 min then put pork together with all the powder ingredients, and bay leafs.
Keep mixing and saute until the meat is half done or no blood then put some oyster sauce and Magic sarap until meat a little but brownish... lastly pour the gata/soyamilk/freshmilk and 2 tablespoon of chedar cheese.No simmer for 15min - 20min in low heat until meat is soft and tender... Have some taste if it is good enough or you need to add some salt.
Notice that I did not include salt because of magic sarap and oyster sauce. You can add it anyway according to your taste. Once done Garnish it with spring onions on top. Then serve.
Since I went to saudi every place they have different style of using masala in every cuisine. This kind of recipe is very delicious,and sometimes I feel addicted to its aroma and tastes.
In India, Masala is one of their national trademark for all cooking, they can't live without masala but they only use chicken, fish, beef, mutton but not pork since they have diversified religion.
As for me a Filipino Christian, Pork is fine to use for the recipe, That's it for now and I hope you'll try this recipe and give me feedback as well.
