Nice tank setup! I used to have a little 29 gallon salt water tank and loved messing with it. I wish I could offer a good recommendation for a bar top, but I'm sure anything you could come up with would be better than what I might suggest.
Very cool. I would wrap the wood frame at the top with the metal plate you used on the bottom and then just go with a slightly oversized piece of Thick 2-3 inches clear Acrylic.
It's a bartop with a river running through it... you can place leds to change the mood according to the lighting you have or simply to make it fit your own bartop (blue seems to be the right color).
Alternatively, I see some posters on the wall that match a Steampunk setting, and the metal does too. so you could try this technique:
Embedding diving tools on the bar top and passing some Jewish Bitumen and varnish on top to give it that look on the pic.
I think a corian countertop would be the best bet. It would be very durable (waterproof) and would not break the glass like a piece of granite. You can also get them in custom shapes.

What a bout a giant red cedar plank, as it is not weathered by humidity and lightweight! That would look amazing with this piece...
