My first harvest of Jerusalem artichoke and I prepared something that I just came up with on the spot. I put it in the food processor with an egg and some french fried onions and fried it to a golden crisp in coconut oil. Kylee and I just loved it.

I grow my fist Jerusalem artichokes last year. Great harvest off just a few. This year they should realy take off.
I bet they will. I put some in a box to move to a new house but I had a set back and I'm wondering if there is a market for them. I really can't even eat them because they tore me up inside really bad after a few times of eating them. Now I just eat meat and when I start harvesting my own greens this spring I will eventually move some plants back into my diet. I don't want to go back to all the issues I had before but I do miss salads after eating nothing but meat for almost 2 months now.
Yea i bet. And i have heard that if you you ferment them there easy on the stomach.
