This looks so delicious ! I would eat it without a hesitation.I have a question.. Do you love living off grid ? Is it easy ? I am kind of interested in off grid living since I've always admired the people that do that .

I do love living off-grid, and for me it's two fold because it allowed for early retirement, which made the adjustment easier. The property came with a well insulated cabin, wood burning stove, and a modest solar power setup that we added to, so that also makes it easier while we build our house. Off-grid, i should say we don't like utility bills, because we have a comfortable amount of electricity that we make, a cell phone, and wireless internet. So as far as communication with the outside world we don't feel too isolated like someone might feel in a off communications grid location. Easier water flow is our next job to tackle.
The great part about hard manual labor is that your mind is free to wander and come up with easier ways. The heat of the summer was something i had to adjust for, spent too much time in the sun and got a bit grouchy, but i adjusted so i would do that work earlier in the morning, and i apologized to my wife :) Off-grid it's important to relax a bit and not over do it, there's always the next day, and things keep getting better the more you figure out better ways to do things .. It's nice spending so much time outside and with the little one. We have spent more time with relatives in the past 8 months than we did the 3 years before. We've been over 8 months off-grid and almost through a winter, i'll share our experiences, lessons, and observations thus far in a post this week. Thanks @castbound :)
