I initially thought this was going to be a simple recipe post with some bits of info here and there. I'm glad I was wrong and was able to appreciate how extensive the effort your placed on this post and process shots. The first paragraphs were insightful when it comes to the science behind pickling. Though I get the gist of how the it's made. The small details that make the pickling process a bit labor intensive was missed. Now I get to learn those important lessons again.
