Hello dere and welcome to da back of da greenhouse, eh! Da place where da canning gets done dere, eh.
Last night, I canned another batch of tomatoes in pints. This was a 2 day thing, I picked and peeled the tomatoes on Tuesday, and then I processed them last evening. I started later in the afternoon because of other stuff that had to get done, so I didn't get done with the canning until after 9 pm. It goes that way sometimes.
Here's the tomatoes that I started with.
Filling the jars with the peeled and cut up tomatoes.
This is how I heat up the jars before I put them in the water bath canner. The jars and contents have to be hot before they go into the almost boiling water in the canner, or the jars could break from the temperature difference.
Meanwhile, I have to heat up the lids.
Once everything is ready, I put the lids on the jars, and put them on the rack in the canner.
Once all the jars are on the rack, the jars are lowered into the almost boiling water, and the burner is turned up to get the water boiling.
The water's boiling. The pint jars stay in the boiling water for at least 40 minutes, it won't hurt them if they're in a few minutes longer.
Here's the result, 8 pint jars of canned tomatoes.
I had enough cut up tomatoes to do 6 more pints today, so I got 14 pints out of that batch of tomatoes, not too shabby!

Yes, this is the best setup that I've had for doing the canning outside the house. I've run the canner outside for the past few years, but I only had the 1 burner, and it wasn't covered, so if it rained, I had to do it in the house.

Are they just canned in their own juices?
Yes, I use the juice that's in the bottom of the tomato pot to fill the space in the jars.

Yes, you can preserve them this way, or you can make tomato sauce and can that, or make pasta sauce with the tomato sauce, and can that. :-)
