On Monday morning I didn’t get up until 7AM. I fed the starving cat and started working on editing photos. I finally got the post written and up by 9AM. I wasn’t moving very fast and had called the neighbor to say I wasn’t going to exercise class.
I made a cup of tea and sat for a while then decided to make some pumpkin pudding. Once it’s autumn there a lot of talk of pumpkin spice this and that. And I’d been thinking pumpkin pudding for a while.
This is a very old recipe I adapted. The apple juice concentrate is the sweetener but you can sub in organic sugar, maple syrup, or other sweetener of choice. I tend to make this not very sweet at all.
I use 2 big bowls, one to mix in and one to bake in. If you bake in the mixing bowl, the sides are messy and cook on, hard to clean.
Sometimes I will make whipped cream to put on it. I never put sweetener in the whipped cream, just LOTS of vanilla. But I didn’t have the energy for whipped cream on Monday so it was straight heavy cream from the dairy farm.
I hadn’t measured out the organic sugar when I put it in, and I was a little too light handed. It really needed a bit more. But I left it as it was and it was pretty good.
I didn’t get much else done all day, slept most of the afternoon. The rain stopped mid morning and by mid afternoon the sky was brilliant blue.
On Tuesday I have to clean the kitchen up, do laundry, harvest the Walla Walla sweet onions, and process the carrot harvest from Friday. It’s been in the pantry since then. My helper friend is coming at 9:30AM and that’s the project for the day.
Never had any pumpkin pudding before. This sounds very interesting but we don’t have fresh cream around here. But we have local pumpkin custard with coconut milk. Now I really want some!
It’s good to have a good rest after several days of hard work. It’s going to rain here soon.
