I have some deer hams in the smokehouse as I type. Saw @mericanhomestead's smokehouse videos and built an unlicensed copy... It works pretty well now that I built a real firebox. The video below is from a couple years ago, the inagural trial run.... smoked chicken, yum. Have done turkeys, deer ribs and tried a duck. I think the duck's skin and fat kept the cure and smoke from getting to the meat...... not the greatest. If anyone has tips for smoking duck, I'm listening.....
