I am wondering about what questions I should be asking as I am thinking about purchasing some acreage. Things like mineral rights, restrictions, etc. I would love to find a good guide on that as well as the great info you provided which I found very helpful.

Make sure you don't have ZONING restrictions. Usually the farther out you go, the better options you find...but that means you are sometimes pretty far out there. That can be good or bad.
I am looking as far out as is reasonable and still be close enough to hospitals, etc.. I just do not think being near the cities is where I want to be anymore.
