Yes and no.

1. Some exchanges allow anonymous. The banks/govs don't likey.
2. Only move your coins to exchange when ready to sell them.
3. use Defi/Swapping

For now p2p requires Trust that unfortunately, has been crushed in this era....the conman runneth.
