well actually i know why ...;-) only difficult for me to explain in english, i will try:

When u cut the cells of an onion, some of the enzyms contain a sour fluid and some a sulfur kind of fluid, together with air they react and become a sulfur kind of gas.
Your eyes react with tears to try to get it out.

If you cut them under the tap water...fluids will react with thattap water instead of your eye fluids...so that would reduce it a lot.
A sharp knife will also reduce the effects.
Someone told me ones putting onions in the fridge for 15 minutes also makes it less bad!
