In this cooking demonstration we are doing a small single bone prime rib roast using a reverse sear. The egg oven is the Chargriller Kamado (CGK) and the fuel is Maple leaf brand lump charcoal used in the normal firebox position. We have a two zone setup indirect side which we will use to cook the meat very slowly till it reaches 120F and a hot direct side to sear the meat and finish the cooking process bringing it to a final internal temperature of 130F for a perfect medium rare.
