. . . so you can enjoy these wonderful lettuce wraps!
I guess you could call them Thai larb-style wraps, but I just call them delicious. As you probably know, larb lettuce wraps have shredded or ground meat in them; in the case of these wraps, two of them have tuna salad and two of them are BLTs.
The cool crunch of the lettuce (Romaine, red or arugula are all fine, too), combined with the rich sweetness of the tuna salad (thanks to sugar free relish and not some sticky gloop like Miracle Whip) make for a light, refreshing meal, as do the salty, savory BLT wraps.
Creativity in a low-carb/keto diet is essential and in this case, I literally just grabbed what I had to make a light, refreshing meal. Isn't it great to eat and feel satisfied, yet not weighted down? The tuna salad is cool, moist and slightly tangy, while the bacon is tender-crisp, salty, smoky and substantial (I use thick cut). The lettuce ties them both together thematically and the toothpicks offer a bit of convenience and presentation.
I like to say that everything has a cost and these little delights are no exception; however, the cost is very low--both in terms of time to prepare and money. Hell, even in terms of carbs.
The totals: 5 minutes prep (providing you keep tuna salad and cooked bacon stocked in the fridge like I do), $2.10 money (tuna packets and bacon on sale--stock up) and 5 net carbs total.
