Okay, technically this isn't a carrot cake as it does not have carrots. But it does taste exactly like a carrot cake! This is an awesome and easy recipe that will definitely curb your craving for something sweet!
Ingredients:
4 tbsp almond flour
4 tsp stevia
1 tbsp butter
1 tbsp cream cheese
2 tsp vanilla extract
1 egg
1/4 tsp cinnamon
Instructions:
Cake
- Spray non-stick spray in mug, or coat with butter
- Add almond flour to mug
- Add 1/2 tbsp of butter
- Add 1 tsp vanilla
- Add 3 tsp stevia
- Add egg
- Mix well
- Cook for 1 minute and 30 seconds in microwave
- Follow the Frosting steps below.
Frosting
- Set out butter and cream cheese and let it soften a little
- In a separate bowl, add cream cheese
- Add the other 1/2 tbsp of butter
- Add vanilla
- Add the remaining 1 tsp of stevia
- Mix well
- Cut the cake in half to make 2 small cakes, then spread the frosting over both pieces
- Enjoy!
