Receipe:
5 eggs
14 tbs butter
3 tbsp Erythritol
10 oz shredded carrots
1 cup unsweetened coconut flakes
1/3 cup chopped walnuts
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
.5 tsp ginger
.5 tsp cloves
2 tsp baking powder
1 1/3 cup almond flour
8 oz cream cheese softened
3 tsp vanilla
1 tbsp heavy cream
20 drops liquid stevia
- Combine eggs, butter, erythritol, and 2 tsp vanilla
- Add carrots and coconut flakes
- add walnuts, spices, baking powder, almond flour
- mix all ingredients
- Place is 8x8 or 9x9 baking pan. A larger pan can be used but it will change the cook time.
6.Bake at 350 for 45 min. - While cake is cooling, combine cream cheese, stevia, and 1 tsp vanilla.
- Once cake is cool, frost that baby!
- Eat the cake.
