This is a recipe that I've used for a year now. It takes about 20 minutes to prepare and about 25 minutes to bake. This recipe serves 4. It can be prepared and frozen and heated later.
It's delicious!
I call it an Egg Bake. You can call it whatever you like.
Ingredients:
1/2 Tomato (standard size) - diced
1 medium avacado - diced
2 tbsp of bacon bits or chopped bacon
3 eggs
60 ml of heavy cream
60 ml of Olive oil
20g of almond powder (or skip if you don't want a firm egg bake)
5g of Baking Powder
5g or more of Flax seed powder. It's pure fibre.
1 tbsp of Mayonnaise (yes, you read correctly)
(optional) garlic powder, chipotle powder. Add a pinch.
Stage 0: Pre heat your oven, silly!
Stage 1: The Bacony part.
Chop the bacon bits, tomatoes, and avocadoes into nice nibbled size pieces.
Then, throw them into a pan and fry with butter or olive oil. I prefer regular Kirkland Olive Oil. It's not Extra Virgina so it isn't over powering.
Fry until the ingredients are infused and the bacon bits gets slightly crispy. If you use plain bacon, fry that first, use that oil with butter and fry your avacado and tomatoes. Fry till crispy as well or to taste.
Step 2: Egg Layer
In a big mixing bowl, crack those 3 eggs (standard size) and whip them until the whites and the yellow are nicely blended.
Then add the cream.
Then add the oil.
Then add the mayonnaise.
Give that a good mix. It'll start to thicken up nicely.
Then add the Almond Flour, crushed flax seed powder, and Baking powder and mix again.
Then add the avacado +bacon +tomato mixture to the egg mix and give it all a good mix.
(Optional) Add ground pepper, garlic powder or any other flavours without adding to the carbohydrate amount.
Then put the mixture into a oven bowl. A rectangular bowl preferably so you can divide into quarters easily.
Bake, uncovered, mid-rack for 23 minutes at 220 C in a gas oven (preheated of course!) or until fully cooked inside and slightly brown on top.
Sometimes, I like to get into the bake around the 18 minute mark and toss in some shredded cheddar on top with dried parsley as garnishing. It's your choice. Watch your macros.
Serving, if you feel that the macros aren't fatty enough, serve with a blob of butter on top depending on your macros.
If you decide to freeze or refrigerate, nuke it in the microwave and serve.
I've even cut it into cold slices and re-fried it in olive oil and then I dumped some extra cheese on top.
