I've never been a fan of the taste of vegetables, that is until I began my ketogenic journey. I learned quickly that vegetables are in fact very flavorful once combined with oils and butters. I rarely need to season them beyond simple salt and pepper.
A new discovery I made this week that I am excited about is paneer cheese, an indian cheese with mild flavor and a firm texture excellent for combining with vegetable. The cheese also is very good at taking on the seasoning, making it an exciting choice for vegetarians looking for meat substitutes.
For today's meal, I fried the cheese using an air fryer. Alternatively, you can roast them in an oven or deep fry them as well. Though, I do recommend an electric air-fryer for the kitchen. It's one of my favorite trusty tools to use for speed and quality of heating.
Fried cabbage is delicious. It has a sweetness, mild crunchiness, and is easy to prepare. I like to add some chopped onions to the pan towards the end, for texture and enhanced flavor.
Fried Cabbage Paneer
prep time: 15 minutes.

ingredients
- 60 grams of canola oil (around four tablespoons)
- 260 grams of shredded cabbage. (around half a head of cabbage)
I cut mine into strands, because I like the texture of it once cooked)
- 120 grams of whole milk paneer cheese
- 65 grams of a chopped onion (around a quarter of an onion)
- 20 grams of parmesan cheese
directions
1- cube the paneer cheese, coat it with canola oil and season as desired. Then cook in an airfryer at 350 degrees for 15 minutes.
I seasoned mine with a sugar-free BBQ rub.
2- coat a pan with canola oil and heat on medium high.
I love my All-Clad pan, and highly recommend you invest in one.
3- Fry the cabbage on medium high heat for 10 minutes.
4- Lower the heat to medium, add onions to the pan and cover for five minutes.
5- Combine all the cooked ingredients in a plate and top with the parmesan cheese.

for additional protein I mixed a scoop of quest protein powder, a personal favorite, with a glass of water.

For a long time I didn't think I liked cabbage but I have recently found that I actually really enjoy it. This looks delicious! I have been thinking about trying the ketogenic diet, I'm just not sure I could live without carbs. I might try carb cycling to start and see how that goes. Your dish looks fantastic!
I don't think I can live without carbs either; once a weekend, I eat all the carbs, thanks to being ketoadapted, my body knows just what to do. I hope you have a positive experience with keto and thanks for stopping by and sharing your thoughts. :)
