Valencian donuts
The buñuelos of wind, of pumpkin, stuffed with figs or of apple are very typical in the Valencian Community where it is habitual to eat them during the parties of the fallas, although also we find them the rest of the year in the different churrerías.

In this recipe we offer you the instructions so that you can learn how to make pumpkin fritters stuffed with figs with which you will surprise everyone.

Buñuelos recipe
Ingredients:

700 g of white wheat flour.
300 g cooked pumpkin
Dried figs that we will soak for 30 minutes.
1 baker's yeast lozenge
Honey, we'll warm up, and sugar.
A pinch of salt.
Sunflower oil. If we use olive we will choose it very soft.
How to make donuts:

We knead the flour with the pumpkin, salt and yeast until we get a very creamy dough that we should let stand, covered, for an hour so that it rises a lot so that the fritters will be more spongy.
With wet hands, to prevent the dough from sticking to us, we are going to take pieces of dough in which we will introduce a fig and fry in abundant hot oil (we should not be burned).
They are left to brown well on both sides.
We serve them in a tray just done.
Some people sprinkle them with sugar or they are also served with a plate of sugar and another with hot honey and each one chooses to "rebozar" the donut.
My advice for donuts
I usually use sunflower oil since the flavor of the oil does not stand out above that of the donuts.
Leave the figs only 30 minutes to soak because we do not want them to lose their sweetness. If they are not too dry, they do not need to be soaked.
Some donuts can be with fig and others without (in case someone does not like them).
The fritters are the perfect excuse to gather the family around this delicious dessert. Some people accompany them with a glass of sweet wine.
