Yes, these are saying what a great source of nutrients are available. In your last link, it says...

I couldn't tell you tbh. I don't have access to the full study; only the abstract. They studied 20 deer in Poland. I don't know if the background to this study had anything to do with a chemical spill of some sort or just a general population thing. The result shows that it's safe to eat the organs of deer.

It was a very isolated area...

The deer seemed to be in excellent health (before they died) so that's good news :)
