My kind of vegetable stew~

My vegetable stew is not found in recipe books or even on google, it is my own yummy healthy concoction. I love it and decided to share with fellow Steemians. Maybe someone might be tempted to give it a go.

Vegetable stew was dinner last night. I love all kinds of veggies so deciding on my special kind of vegetable stew was easy.

I have not shared recipes on social media platform before so my approach is very rustic and rudimentary!

Depending on how much you want to make determines the amount of vegetables you chop.

- Firstly, heat a reasonably big stockpot and pour some extra virgin olive oil when it is hot.

- Meanwhile, chop an eggplant (aubergine) into cubes -big or small pieces and place into a heated stockpot. Let it cook until pieces are browned.

- As eggplant is cooking chop the other vegetables of your choice. I like onion, carrots, sweet potatoes, pumpkin, zucchini (corgette), corn (can or fresh), spinach. (pumpkin is a popular tasty vegetable in Australia for savoury dishes)

- Once the eggplant is soft and reduced in size place on a plate. Put some more oil into the stockpot and add the onion and carrots at first. After a couple of minutes add a few gloves of grated garlic. It is up your love of garlic as to how much you want in the stew. Let everything cook for about 5 minutes and add the sweet potato let it cook for 5 minutes and add the pumpkin. Cook for a further 5 minutes or so.

- Then add the eggplant, zucchini and a litre or so of vegetable, chicken or beef stock. Again this is your choice.

- It is optional to add canned chickpeas or lentils. Both are tasty and give protein to the dish.

- Add salt and pepper to the stockpot. I put in a couple of tablespoons of Turmeric. One can use chilli or any preferred spice.

- Bring to the vegetables to the boil and let simmer. The size of the chopped vegetables determines how long you let the stew simmer for.

- Add the chopped spinach leaves just before you serve

A big stockpot of vegetable stew lasts for several days. It is easy to store in the refrigerator.

Im just looking for healthy food because i have a diet ;) This one looks really tasty and light i hope this is good idea to eat it before training ^^ Thanks for share =D

It is light enough, but will need to eat perhaps at least 30 minutes or even an hour before training.
