500gm White Chocolate
200gm Milk Chocolate
1 Tin of Condensed Milk
1 Packet of Port Wine Jelly Crystals
2 Cups of Dried Fruit (soaked in a quarter cup of Tawny Port for 1 week)
Red and Blue colouring
Soak fruit in port for 1 week
Melt chocolate and condensed milk until really melted
Add jelly crystals and stir like crazy (use a handheld mixer if you have a ceramic bowl)
Add a few drops of red and blue colouring until you get the desired port colour
Add port soaked fruit and stir in
Cook using 2 Crust Method (alcohol based fudge gives more of a skin than a crust)
Set in fridge overnight ·
