I tend to consider salad a side dish, but I found a special little feast in this deluxe spinach salad.
We're on a 30-day "fast," although it feels like a feast to me. Today we're a few days into our newly embraced raw food lifestyle. This is the second stand-out dish we've discovered. It's a spinach salad with homemade sesame sauce, mushrooms, and pine nuts. The secret is in the sauce!
Sesame Ginger Sauce
Here's the recipe, adapted for our family.
Our kids have an aversion to ginger, because they think it's too spicy. So Kat created a kid-friendly variation of the official recipe (see the photo below). FYI, we reduced the ginger to a little sprig. And we excluded the sesame oil because it seems redundant. Here are our ingredients:
- 1 C sesame seeds
- 1 C water
- 1 C olive oil
- 1/2 C apple cider vinegar
- 1/4 C tamari
- fresh ginger
Blend until creamy. Taste-test and adjust for your family's preferences.
The book that finally led into the raw foodist way of life is called Living On Raw Food.
Here's the recipe that inspires this spinach salad dish.
Enjoying Our Sunflower Dressing In The Sun
Something about these living foods brings me closure to knowing my Nature.
I kept the camera out during lunch, so I looked for a personal touch. And I caught a sparkle of sunlight from our sun catcher. Beautiful, right? Rosalie (my daughter) and I chose this one a few years ago, when Kat (my wife) sent us on a mission to find a crystal for a house we'd moved into. Hope you enjoy.
A simple glimpse of everyday heaven, in a sun catcher.
