It's Hanukkah my friends! For me, this means relaxing, seeing my friends, getting to decompress after college finals, and of course, making some delicious potato latkes to eat! Tonight I made these golden brown potato latkes, and they were VERY good.
This a simple recipe and doesn't too much time or work. I used a rotisserie chicken and some sour cream, cranberry and apple sauces to accompany my latkes. The sour cream is really good as a dipping sauce to use with the potato latkes.
So what are latkes? They are potato pancakes which get fried. The latke is made out of grated or ground potato, flour and egg, often flavored with grated onion or garlic, salt, etc. Potato latkes may be topped with a variety of toppings: The savory, like sour cream, salmon and chicken to the sweet, such as apple sauce and fruits.
INGREDIENTS
4-7 Peeled Potatoes, grated
2 Eggs
3 Tablespoons Flour
Salt & Pepper for taste
3 Green Onions, chopped
3 Teaspoons of garlic powder
You combine all these ingredients into a mixing bowl. Then take 2 paper towels and use them to press down onto the mixture. This allows the excess water to be absorbed so it doesn't mess with the oil when you go to fry it up!
The next step is to form up the latkes in your hands. Do this by rolling the potato into a ball and then squish it into the shape of a disc.
Next up is to get your frying pan nice and hot for the vegetable oil and latkes!
Now comes the time to fry and flip! When the bottom of your latke looks golden brown and crispy, then it's time to FLIP!
The golden and crispy exterior makes me say OY!
After frying these up, I put the latkes on a baking tray and put them in the oven for 7-10 minutes at 200F, this is to give it a final crispy crunch on the outside!
My friend @djraycraft , my brother Ben and his friend, were my test subjects for this recipe. As you can see , they are really happy with the results.
