Getting Back to Baking

Ever since I was a tiny little thing, though some could argue I'm not that big these days either, I have loved baking. I was never into anything that complex, but I like dough. I like the simple acts of baking, it's a kind of therapy when you are doing it at your own pace and without any pressure.

Working as a chef for years, killed all my desire to do anything in the kitchen, other than pour myself a drink. Now that I have been safely out of that environment for 10 months, I am slowly getting back into cooking and baking.

A couple days ago my mom and little were coming over for evening tea, and I though to be a good host and bake something. I dug out my Kitchen Aid that hasn't seen anything else than dust during this year, and texted @escapist to ask her a recipe for focaccia, because she makes a really good one! She gave me exact amounts for salt, sugar and yeast, in relation to the amount of water I would use, but my kitchen scale had run out of batteries so I ended up eyeballing it all.

While I got my dough properly kneaded and I was waiting for it to raise, I embarked another baking project too. A Swiss roll cake, which is super simple and one of my favourite things to both bake and eat. I didn't take any pictures of that, because I forgot, like I also forgot to take a picture of my bread when it was out of the oven. I was too busy filling myself with carbs, sue me.

I topped my focaccia with rosemary and cherry tomatoes, and of course with a heavy amount of olive oil and Maldon salt. It came up pretty well but not as good as Esc makes it.

You know what would be cool?
If you would share the recipe - I've been looking for a good focaccia one for years now.

You need to beg @escapist to give it to you ;) She is a good teacher too!

Someone is going to be a butterball

I don't know what a butterball is, but it sounds delicious! ;)

I see you are enjoying your new flat and lots of space in a kitchen. :)
This looks really nice, I would like to try it sometimes in a future - so I will come to one of you two wizards - but I have no scales at all guess I will need to calculate it using its density and volume it takes in the bowl :D :P
This is the thing I baked todays:

It is called Burek (With capital letter!), Ottoman empire brought it to us and it is delicious! :)
I might do a post about it too :)

Actually my kitchen is smaller in here than in the previous apartment, but this is an open concept one, so I tend to spend more time in the area, and I can watch tv while I cook 😝

Please do make a post about Burek, I would be interested to see what it holds inside!

Loooks delish!

It was! So sad it's already long gone.

Mmmm, oh my goodness, I'll take a giant hot oily slice of this please and then slather it in virtual butter, Oh I'll eat the entire plate full.. thank goodness it's virtual carbs :)

I bet it was so yummy.

The bad thing with virtual carbs is that they don't taste any good :(

It looks somewhat eatable to me lol 😉 😂

It was very edible!

Just woke up to your post and whilst it's good feel somewhat disgruntled that I don't have some warm foccacia in the oven for breakfast. Oh well, I'll have to make do with corn flakes! 😉 would rather fresh foccacia though.

Corn flakes are not bad, but fresh bread is fresh bread :P
