A popular and easy recipe for baked and stuffed sweet Potato with Aioli:
Ingredients:
1 Large sweet potato (min 600g)
500g of minced meat
1 big onion
4 tablespoon of tomato paste
1/4 can of sweet corn
1 springonion
2 cloves of garlic
2 lettuce leafs
2 Table spoons of oil
salt
pepper
1/2 tea spoon of ground thyme
1/2 tea spoon of ground basil
1/2 tea spoon of ground garam masalaa
2 lettuce leafs
2 Table spoons of oil
For the Aioli:
4 Table spoons of Mayo
3 Table spoons of sour cream
4 cloves of garlic
Preheat the oven to 190 degrees celsius
Put potato in aluminium foil and place in the oven for 1.5 hours
After 1 hour start frying the mince at high heat
Chop onion and garlic in dice and ad in the pan
Add spices, once cooked trough ad tomato paste
Add half a cup of water and let it simmer
After 1.5 hours ad corn
Take sweet potato out carefully cut in half lenghswise ( if the potato isn't soft leave it in the oven for an extra couple minutes)
Take a spoon and carefully scratch out the middle of the potato
fill space with mice
Put in the oven again for half an hour at 180 degree celsius
Chop up spring onion into rings
For the Aioli:
Add sourcream and mayo into a small bowl and put garlic through a garlicpress into them mix stir and done
Take potato out of the oven put the lettuce leaf on plate potato on top spricle springonion
