I bring you the way to do it step by step here.
First of all a little description: Vermouth is an alcoholic beverage made from white wine, rosé or red wine to which different botanicals and spices are added, that provide a wide variety of flavors.
What do we need?
- 75 cl of wine.
- 1 funnel.
- 1 strainer or filter for coffee.
- 1 container with airtight lid (75 cl).
- 1 empty bottle (75cl).
- 80-100 gr of sugar (preferably brown sugar).
- Botanicals like sagebrush (essence of Vermouth), juniper berries, coriander seeds, green cardamom, cinnamon, gentian root, sage, chamomile, lemon peel, orange peel or any ingredient of your choice.
What we are going to do firstly is to get a bottle of wine, white wine is generally used, but it can be made with rosé wine and red wine as well.
We will empty the whole bottle in a cooking pot and bring the wine to a boil, when the first little bubbles come out we stop the fire.
Next we will add approximately 100 gr of brown sugar, the white sugar also serves but it doesn't have the same color as the brown one. We also add the botanicals and spices that we have chosen. We remove it well and let it recover the ambient temperature, about 10 minutes will be enough.
When it has lowered temperature, using the funnel, pour the wine with spices in a container with airtight lid. This container will be where the maceration will take place, this maceration will last 7 days in a dry and dark place.
After 7 days, we will pass the resulting brew from the container to the bottle, pouring the spices and botanicals and making sure that no remains remain.
Once this is done we have the Vermouth. Cool it down and serve it!🍹🍹
