Now...I know not everybody is familiar with Waffle House...in fact, unless you're in the Deep South...there's a better than average chance you've never even heard of a Waffle House...let alone seen one, or eaten at one...here in North Carolina...we have a Waffle House on almost every corner...even in a town of over 300,000 people...Waffle House has more locations than any other restaurant in the general vicinity...

As you can see from the map above...you can flip an egg in this city without hitting a Waffle House...so, what's the Waffle House Index, you ask...well, believe it or not...it's a scale that FEMA actually uses to assess the damage and destruction an area has received from a natural disaster...here's how it works...Waffle House is known for it's 24/7/365 policy...that's right, these waffle making muffhuggers are open around the clock, all year long...

According to Craig FUgate, FEMA administrator in 2011..."if you get there and the Waffle House is closed? That's really bad. That's when you go to work."...the Waffle House index has 3 different levels...Green means that the restaurant still has power and is able to serve a full menu; damage is minimal...Yellow means that the menu is limited, which signifies that there may be interruptions in power, or that the current food supplies are running low; damage is manageable...and Red means the restaurant has closed, which goes against company policy unless power is completely out, and/or supplies have run dry; damage is at its worst...

I don't know a Waffle House that does taste good...they're open 24/7 every day of the year down here...each one I've been to looks like it hasn't had the kitchen area cleaned in decades...I've never actually eaten at one...just done work on their air handling units...
