Well, sadly im not off grid any more as my life changed completely twice now si ce covid.. but at least i live in india again in a simple spiritual village and ashram, albeit in a very normal square and very on grid apartment!
Spiritual Village, Ashram, India. Sounds like you recovered nicely from those changes in your life. My life has also taken a 180 but I have never felt so content.
Being off grid is a state of mind, we'll get there in the end.
