Funny, here I am on my cell phone while roasting cacao for chocolate. A marriage of the past with the future. That's how we do it, right. We build on the past to create a better future.

Roasting cacao and not burning it over an open fire is a true art. It requires intuition and management. The cacao requires 20 minutes or so of a good roast, however, not hot enough to burn it or crack it's shell. As once the shell is cracked, well the flavor enhancement is over.
A fine line indeed.
