Ingredients:
Wash, prepare, rinse whole red snapper.
A few pinches of salt
1/2 cup all purpose flour
1/2 tsp. Old Bay seasoning
2 Tb. olive oil
Sauce:
1 Tb. olive oil
4 large garlic cloves, thinly chopped
1/2 cup chopped fresh parsley
1 bay leaf
1 cup dry white wine
28 ounces of small red and yellow tomatoes
Salt red snapper and coat it in flour seasoned with Old Bay seasoning. Heat 2 Tb. olive oil and brown snapper a few minutes on each side.
Add 1 Tb. oil and garlic. Add parsley, bay leaf, and wine to the pan for a couple of minutes. Add fish and tomatoes. Cover and cook for 10 minutes til cooked through and serve with lemon slices and rice or new potatoes.

@senseicat the red snapper looks amazing.I love eating fish especially the smoked variety.I can honestly say I have never tried a red snapper before.Your photo has just inspired me to take a trip to my local fishmongers tommorrow.I think squeeze of lemon always finishes any seafood dish off.Match made in heaven🍋🍣🐟🍋
I grew up in the Bahamas and we would marinate the Red Snapper a couple of hours in fresh lime juice salt and pepper. Yummers! Make me want some.
