My brother-in-law is an avid bow hunter and used to drop off venison summer sausage and deer steaks a couple of times a year. I would marinate the steaks in red wine and Italian dressing overnight in the fridge then grill it on the bbq like any other steak. I like mine a nice medium, soooo good. Most people overcook venison. I love it all, chili, stew, jerky. If it's game, I'm in.

Nice, glad you get some too. I gotta try marinating them. My goto way of cooking them is usually low and slow. Crockpots are great for Deer meat I find.

Now I have a smoker I may give that a try as well, marinating them and then smoking them.

I have a Masterbuilt smoker and smoke all kinds of meats. I have found venison doesn't really turn out all that well in a smoker unless you are doing jerky. The meat just doesn't have any fat content so it comes out terribly dry. It would be like smoking a pork loin, it just doesn't work but for jerky yeah a smoker makes for great venison jerky. I'm with you on the crockpot thing, nothing better for chili and stew.

Oh good point about the meat being very lean. OK I will keep that in mind. I think we are going to try roasting some and see how it comes out. Also going to make some jerky.
