What is nicer on a cold celebratory night than some thing nice and hot to eat?
Yesterday I posted my killer Alfredo Recipe. Today I'm talking cake.....
So the thing about this cake is that it can double as warm pudding (if it flops) and here the story behind how it came to be ... When I'm upset I like to bake at times, the smell is comforting (but I am not a cake person). So i was home one day, middle of winter, freezing and upset. Feeling the need to be creative. I spotted a sack of oranges and decided i was going to try and make an orange cake. (I'm not a cake person but this is good) The smell was festive and when I was done taking it out of the oven, my family swarmed the kitchen and ate the entire cake while it was still warm.
The great thing about this cake is that you don't need icing, I made a citrus sauce that you pour over the warm cake that makes the cake moist and sweet. Now to how i found out it doubled as a warm pudding. My brother took home economics at school and for an assignment they were supposed to make a cake. he tried my recipe but took the cake out before it was completely done in the middle. As he had already poured the sauce over the now pudding he couldn't put it back in the oven. Fortunately my cousins were there to help dispose of the flop and I helped him make a new one.
Okay so as I mentioned earlier I posted my Alfredo recipe yesterday, in the post I mentioned that I made Alfredo for about 15 people a few weeks ago. What I didn't mention was that I also made an orange cake for dessert.
So let me share what I know.
Ingredients
cake
4 large eggs
375ml sugar
25ml vanilla essence
375ml milk
750ml cake flour
25ml baking powder
1ml salt
250g butter
1/2 a cup orange zest (the peels from the oranges grated) or more depending on how much you feel like putting in.
Sauce
the juice of 6 oranges (about 2 cups of orange juice)
50 ml lemon juice
1 cup of sugar
Method
Preheat the oven to 180 degrees Celsius.
Spray baking trays thoroughly
squeeze the juice out of the oranges and into a cup, then grate the peel. Make sure that you only grate the orange parts.
Cake
- Put the butter and sugar in the mixing bowl and mix until the butter is soft and creamy.
- Add vanilla essence, orange zest and eggs, then mix.
- sift all the dry ingredients together and add to the wet mixture
- Add milk while mixing until the mixture is smooth, add rest of the milk and mix again.
- Spread mixture evenly in your baking tray and put in the oven for 30 -45 min.
Sauce
- put your orange and lemon juice into a small pot and put it on heat till it starts to boil.
- add sugar and mix until dissolved.
- let it simmer for 5 minutes.
Once the cake is out of the oven put the baking tray on a cooling rack and poke holes into the cake with a knife or toothpick, also make sure the cake is loose around the edges. Pour the sauce over the cake until the cake is immersed and leave to cool.Once cooled down, move the cake from the baking tray onto cake stand.
Optional
If you would like to decorate the cake, put fresh berries or other fruit on top of the cake and sift icing sugar for a snowy look. If you have extra sauce. warm it up just before serving the cake so guests can add as they would like. Great served with cream or ice cream.
