Beans in their sprouted form have the highest concentration and bio-availability of nutrients.
They contain a high amount of protein and dietary fiber, as well as vitamin K, niacin, thiamine, vitamin C, vitamin A, and riboflavin etc… in addition to minerals like manganese, copper, zinc, iron, and calcium.
Many of these component nutrients increase dramatically as the sprout continues to develop.
Home-grown sprouts are safer then store bought. Key is to use clean utensils and kitchen towel to avoid any kind of bacterial growth . Keep rinsing beans at required interval of time also wash that kitchen towel, drain out excess water and then cover the beans to put it away for next 24 hr.

Is it safe to eat them raw once they're sprouted?
Yes it is absolutely safe to eat them raw .. just wash them well before you eat them raw.
