I cooked Caldereta for my brother's birthday dinner. I learned to cook it from my mom. Since she is no longer with us, I cook it once in awhile during special occasions. Nothing compares to mom's cooking but I can only try. I think I got the spicyness and a little bit of the flavor plus the aroma. There's just something about the texture and the tenderness that I have not mastered yet but I think I am getting there. I should cook it more often. This is just one of the many dishes my mom was good at. After all, she hails from the Philippines food capital, Pampanga.
