I prefer to eat low on the food chain. Its the best fuel for my meat suit physiology.
I am a very busy person, and aim to be efficient with my food preparation. If you prefer to eat low carb, low on the food chain, and keep your food preparation to a minimum, you might want to consider coming back for more recipes.
Ingredients:
green lentils - two cups
water - 12 cups
celery - 3 stocks
carrots - 4
onion - 1
diced tomato - 2 cans (perhaps better to use fresh?)
bay leaves - 1
garlic - 3 gloves
saffron - 5 to 8 threads
black pepper - (add however much you want)
ras el hanout - two fist fulls (I am a 5'3 tall female. My hands are moderate in size in relation to my proportions. This is a North African spice you can find online. Adding this is optional. But it gives it a good spicy kick.)
salt - (I usually salt my individual bowl, not the main source.)
olive oil - arbitrary amount (I added a thin layer that covered the surface area of the bottom of the pan)
Equipment:
cutting board
knife
crockpot (an appropriately sized sauce pan with a lid would do just fine)
Instructions:
- Chop up onion, carrots, celery and garlic. Your choice of size and consistency.
- Add chopped up vegetables to the sauce pan or crockpot containing olive oil, and a bay leaf. Turn the heat on low. Then go do something else. But don't forget you have something on the stove. Come back when you think you need to start stirring.
- Stir for a few seconds. Let it heat for a few minutes.
- Pour in the lentils and water. Add the tomato. Add the rest of the spices.
- Go do something else. It will be ready in about six hours. Maybe less. Maybe more. Check up on it every now and then. Once every hour or two should be fine.
You now have the most delicious lentils I have ever had the privilege of eating, that will last you for about a week if you eat it regularly. Ras el hanout is a spice mix that goes well with savory protein flavors and harmonizes well with lentil flavors. Its the crown and conquering flavor in this dish.
