I normally don't do smoothies for lunch but this was so good and filling this can qualify for lunch! I turned this into a protein ice cream because it was so thick and creamy!
1.5 cups of unsweetened almond milk
1 tsp vanilla extract
1.25 cups of pre cooked and then frozen, cauliflower rice
1 cup cooked and then frozen sweet potato
1.5 tsp of cocoa powder
.5 tsp Smart 138 pure organic stevia
1.25 tsp of Smart 138 Dragon fruit powder
1 scoop of Smart 138 vanilla pea protein
1 tbsp cashew butter
Blend until creamy with a high speed blender. You will need to do some additional stirring because it is so thick.

Love that you use Cauliflower rice in this. I"m intrigued.
Yeah and you don't even taste it but because you're using frozen riced cauliflower it works so well at thickening better than ice would. The main thing to remember is to make sure that you cook the riced cauliflower first and then freeze it . Should always be done with all cruciferous vegetables to prevent damage to the thyroid from too much of them. Cooking them overrides this.

Yep! No banana. I'm using frozen cauliflower and frozen sweet potato in place. This means less sugar and it makes an extremely thick smoothie!
