To complement the iftar menu, today I make fresh vegetables from cassava leaves.
Cassava in its scientific language called manihot esculenta is an annual plant of tropical and subtropical shrubs.
Cassava plant, widely used is the bulb as a source of carbohydrates.
In the tubers, many contain calories, calcium, protein, vitamin C, vitamin B1, phosphorus, iron and fat.
Protein contained in cassava, the levels are more on the leaves than the tubers.
Cassava leaves are mostly used as vegetable dishes.
To cook cassava vegetables for 1 portion, the following ingredients are needed:
1 bunch of young cassava leaves, 1 clove garlic, 2 cloves of red onion,
1/2 galangal stem, 1 pecan seed,
2 large red peppers, 5 small chillies,
In order for the dish to be perfect, add auxiliary materials are: 2 pieces of orange leaves, a piece of turmeric leaves, 1/2 stalks lemongrass on the mashed.
Then added with coconut milk 1/4 liter, 2 glasses
clean water, sugar, salt, pepper,
turmeric powder and coriander powder to taste and cooking oil.

boil sweet potato leaves until soft, add a little salt, after soft sliced leaves yam buds, then drain.
After that heat the oil, saute the smoothed spices, orange leaves, turmeric and lemon grass until fragrant, then add water to stir well.
Then enter the sliced cassava leaves, coconut milk, turmeric powder, coriander powder, sugar, salt, pepper, and stir until boiling. After that the taste correction, whether it is in accordance with the taste.
