Ingredients:-
- 15 Ounces chickpeas.
- 1/4 Cup olive oil.
- 2 Tsp lemon juice.
- 1 Tsp minced garlic.
- 1/4 Tsp salt.
- 1/8 Tsp ground red pepper.
- 4 Pita bread rounds.
- 1 Cup chopped tomato.
- 4 Ounces sliced black olive.
- 6 Ounces shredded mozzarella cheese.
Method:-
MAKES. 4. SERVINGS.
Preheat oven to 425'f.
For hummus, place chickpeas, olive oil, lemon juice, garlic, salt and pepper in a blender. Pulse on speed until smooth.
Spread hummus on pitas, top with tomato, olives and cheese. Bake 10 to 12 minutes or until cheese is melted and lightly browned.
Hummus Pita Pizzas is ready.
Serving Suggestion:-
- To make this appetizer an entree, add a cucumber - yogurt salad. Combine 1/4 cup greek yogurt, 1 tbsp lemon juice, 1 tsp minced garlic and 1 tbsp chopped fresh dill in a large bowl. Fold in 3 cups chopped cucumbers and 1 cup chopped onion. Season with salt and freshly ground black pepper to taste. Chill 2 to 3 hours before serving for flavors to blend.
