Heat the broth and let it simmer.
Heat some oil and sauté the garlic and shallot. Add the quinoa and cook for concerning 3 minutes.
Add ½ cup of broth to the quinoa and cook till it evaporates. Keep continuation the method till the quinoa cooks. Your Italian rice is prepared.
Heat remaining oil and cook the mushrooms till they flip brown. Add salt and pepper and take away from heat.
Add the mushrooms and also the cheese to your Italian rice.
