Ive been thinking about dinner all darn day!! Ever have one of those days where your hunger just cant be taken care of?! Thats me today. Maybe its because Ive been decided on dinner since 10 AM! Today we are gonna have Crispy Baked BBQ Chicken Legs and Sausage, Some roasted corn on the cob and baked beans! Figured Id share a few secrets with you guys for todays #monthlyauthorchallenge!
I love a chicken thats extremely juicy and full of flavor on the inside, with a crunchy skin on the outside. For me this can only truly be done by putting the chicken into a brine to start off with. For the brine, start with a bowl big enough to hold your chicken and a little more than 2 quarts worth of liquid.
In bowl add-
1/2 Cup of regular sugar
1/2 Cup of kosher salt
Pour into this 1 cup of hot water and stir until sugar and salt are dissolved.
Add in 2 quarts of cold water- stir well
Mix in- 1 tsp of cayenne pepper
1 tsp of garlic powder
1 tsp of onion powder
(These are optional. I personally love to add in flavor where I can. You can also add in different seasons if you want. I love these flavors for a great BBQ chicken!)
Let this chill in the refrigerator for about 4 hours. After the 4 hours are up, remove chicken from brine and discard brine. Wash off chicken, removing excess brine on chicken. Thoroughly dry chicken with paper towels. A dry chicken will be a crispy chicken! Let chicken sit out while you mix up your season rub.
In a small bowl add-
1 Tbs garlic powder
1 Tbs onion powder
1/2 Tbs chili powder
1/2 Tbs smoked paprika
2 tsp of kosher salt
1 tsp pepper
Mix well and cover chicken with rub, making sure to get into all the little crevices.
Next, line a baking sheet with aluminum foil (this is to make for easy clean up after!) and lay a cooling rack onto. Spray well with non stick spray and line your chicken legs on the rack, making sure to leave room so they arent touching.
Next we are gonna bake these bad boys in a oven thats been preheated to 350. Bake for 40 minutes, skin should be crispy and fat should start to render from chicken. Brush on your preferred BBQ sauce, we are using a sweet and spicy sauce. At this point, Im going to add on the try some smoked sausage, giving it a few little pokes so it can release some of the fat if you would like. Stick back in oven. Brush on more BBQ sauce every 10 minutes making sure to flip chicken every time for about 30 minutes. When chicken is cooked all the way through, reading at least 165 degrees with a thermometer and juices are clear, turn on the broiler and broil on high for 2 minutes, flip and another 2 minutes for the other side. This will add a bit more crunch!
Pair this with your favorite sides. We are having some delish baked beans and buttery corn on the cob!
