Managed to knock these little beauties up!
I fried a wee bit of spinach some onion and garlic stuffed it into a portobello mushroom and wrapped it in some good quality Parma ham.
Fried it on the griddle for a few minutes, now sitting in a red wine and beef stock jus, ready to accompany barbecue chicken and tater tots !!! Winner winner chicken dinner 🍗
