Personally, I can't go without pizza in my life! In my opinion, cheese is like hot sauce, tastes good in almost everything. :)
As far as amounts, it really depends on several things, including how I feel. Everyone is different, so I may be more sensitive than others or the other way around. I just try to stay away from foods my body doesn't do well with, like gluten. Imo, adjusting the lifestyle for yourself is the most important. Many people don't do well with low carb, or fall off the wagon for simple reasons. If cheese is something you don't have a bad reaction to & will help from falling off the lifestyle... it's worth it. Even when falling off, I dont beat myself up about it. Then its easier to jump back on.
Besides, cheese does have some great aspects aside from the great taste. ;)
