Food spoilage is the process in which food deteriorate to the point that it is unfit or not edible for human or it is state of which quality of edibility becomes reduced.Food that is capable of spoilage is called PERISHABLE FOODS.
CAUSES OF FOOD SPOILAGE
PRESENCE OF MICRO-ORGANISMS: Micro-organisms are very small organisms which cannot be seen with the naked eye.They spoil food items when the condition for their growth is appropriate.There are three types of organisms that causes food spoilage;Yeast,Moulds and Bacteria.
ACTION OF ENZYMES IN FOOD: Enzymes are chemical substance food in plants and animals.Enzymes helps in ripening of foods and vegetables.For example, a raw green mango after a few days becomes sweet in taste and yellow in colour due to the actions of enzymes.If you keep this yellow ripe mango for a few more days, it will become soft,develop blackspots and start smelling bad,this is due to the continued actions of enzymes.
INVASION OF INSECTS,WORMS OR RODENTS IN FOOD: The small brownish black insects or small white worms in rice eats the food grains.They make small holes in the grains and at times convert the grains to a fine powder.The food grains becomes unfit for consumption.
