I absolutely see your point in setting prices on things to sell at this platform. Since the value of SBD changes from the high 8usd to low 2.5usd it would be insane to sell something for 100 SBD and expect 800usd but END up getting 250usd. That is not possible to run a store like that!
As you say if SBD where pegged it should be better and easier to operate on “normal” conditions.
I have so far seen insane prices on items been sold, but 
has given it some reason. Some of the items has ended up with 2 happy parts the seller got what he wanted and the buyer ended up with goods and a huge money cash back.
But I don’t think this is what normally happens and I think it will take time to get tings happen so it will make it easier to understand the selling and buying routines and to find items for sale.
