I tried to make a gluten free pie to impress a guy some years ago and it turned out to be a nightmare!

I was visiting my mom, in her kitchen, whining and pleading her for help but she just looked at the flour concoction and said "I don't know what you expect me to do with this" and left me on my own. (This is a lot funnier to imagine because at the time I had ZERO baking experience and the whole thing was a grade A flop.)

After (I exaggerate, not) HOURS of perseverance, eventually I got it to stick together and get into the pie dish...

ONLY for it to get smooshed later on in the delivery container (call the wahhh-ambulance).

FYI for those keeping up with this story, my suitor wasn't exactly impressed with his smashed pie that had traveled 26 hours. 😆 You live and you learn!

So anyway, this is a special triumph as it took me many years to try this seemingly impossible feat again!

This is a blackberry, cashew, coconut cream pie but that's not the impressive part-- the crust is a dream! (YAH, it ACTUALLY tastes good too!)

What You Need:


Crust

  • ¾ almond flour
  • ¾ coconut flour
  • ¼ arrowroot powder
  • 3 tbs chia + 6 tbs water
  • 1 tbsp carob or cacao powder
  • 1 tsp vanilla
  • ½ cup cacao butter
  • Pinch of sea salt

Middle

  • 2 cups blackberries
  • 1 cup soaked cashews
  • 1 cup soaked pecans
  • 1 tsp maca
  • 1 tsp lucuma

Cream

  • 2 cups coconut milk
  • ¼ cup arrow root powder
  • 1 tbsp mesquite powder
  • 1 tsp vanilla
  • 1 tsp stevia powder

What To Do:


  1. Preheat the oven to 350'F
  2. In a food processor, put all the crust ingredients in and blend until it forms a dough ball
  3. Take the dough ball and press it into an oiled pie tray then put it in the oven
  4. Put all of the "middle" ingredients into the food processor and blend (add some natural sweetener if you like-- for me this was sweet enough!)
  5. Take the crust out of the oven and pour the middle onto it then put it back in
  6. Stir the coconut milk and arrow root powder together then, pour it into a sauce pan on medium-low heat, and stir in the other ingredients. Turn off the heat and remove as soon as it starts to bubble. Stir it as it starts to thicken. Set aside.
  7. Take the pie back out and spread the cream on top. Feel free to add some nuts or coconut shreds then put it back in the oven for about 5-10 mins.
    Note: The crust should be in the oven for about 25-30 minutes or until it starts to brown. Please note that my oven is really low heat so your oven may vary!
